YES! I am so happy to be writing this post! I was so, so nervous about this week, especially since last week I had such a puny weigh in. I’ll keep you hanging on the edge of your seat for the weigh in results, though ;). First, I want to tell you about a little concoction I made for dinner the other night!
I am a Southern girl, born and raised in South Texas, the land of milk and honey — err, more like horchatas and bbq sauce. Since starting Nutrisystem, I’ve been craving a barbeque sandwich, so this week, I got creative! Check out what I made:
Using a Nutrisystem Grilled Chicken Breast, I made a Barbeque Shredded Chicken Sandwich! I prepared the chicken as directed, and added about a tablespoon of bbq sauce, then fork shredded the chicken. It made two of these sandwiches — I had already snarfed down the first one by the time I had the presence of mind to take a picture. One whole wheat roll is included in the meal, and the other counted as my SmartCarb for that meal — perfect! It was so delish.
I find it so hard to believe that we’re already heading into our second month of Nutrisystem. Our pantry meals arrived yesterday, and I wish I could unpack them all. We’re closing on our new home in a week or so, and I figure there’s no sense in unpacking and repacking, so we’ll go box diving for our meals for now!

Yep, you heard right. This week, I lost 3 pounds (!!!) bringing my total to 10.6 pounds! YEAH!!! Andrew lost 3 pounds, bringing his total to 15 pounds! Awesome!
